Fruit SconesAs you might have read earlier I love scones. They are the perfect company for the Sunday afternoon tea. Scones need only few ingredients and are very fast to make.

I looked for Irish baking books on our round trip two years ago and I found the Avoca Tea Time book in the shop at Powerscourt Gardens and fell for it. Lots of those recipes made it to my personal favourites list. I’ve done the same recipe over and over again but this time it ruled, they turned out sooo good. Even the next day they were super light and delicious, so I’d like to share this with you.

Cinnamon Marzipan Roll

Last weekend I Cinnamon Marzipan Rollfound a cube of fresh yeast in my fridge that was almost expired so I decided to surprise my boyfriend with a twisted roll, the first I ever made. It looked nicer in the Lecker magazine but it was very delicious. I know a lot of people that are afraid of yeast doughs because they heard it is difficult – it’s not! A yeast dough is pretty easy and most of the work is done by the yeast itself while you can put your attention on other important stuff 🙂 No aluminium, no draft, heavy kneading, no machines, pre-dough … there are tons of things that are common sense about yeast doughs and that may have scared you off. You can forget almost all of this (except for the draft), I swear, no lie 🙂

Peanutbutter Fudge – Valentine Hearts

I’ve been inspired for this Valentines Treat by Man of Aran Fugde who recently posted heart shaped fudge on their facebook page. I’ve been dying to make some Fudge on my own but been put off by all the hassle with tempering the sugar, complicated recipes and the confectioner in a TV show who talked about the million things that can go wrong. Once again The Bakery Edition of Lecker Magazine had the answer. I found this very easy recipe from a blogger that was featured in the magazine: Peanutbutter Fudge by Zucker Zimt und Liebe.

The recipe is in German this time and super easy to make. After the Fudge was set, I used a heart shaped cookie cutter et voilá…Peanutbutter Fudge Hearts

Quick Apple Roll – or how to welcome friends for coffee

quick apple roll I’ve been fighting this cold for almost 2 weeks now and I am terribly bored. Being home all day and not being capable of doing anything else than watching tv due to the lack of power is so annoying for me. But luckily my friend offered to come over for a cup of coffee and entertain me for some time on short notice. I wanted to pick up some bread anyway so I made my way to my favourite bakery to buy bread and some quick bite for coffee. Too bad it was Faschingsdienstag and the bakery was closed already and so was the second one I walked up. My bad, should have gone earlier but it was only half an hour to go til my coffee guests arrival. So I figured out it would be a great idea to serve some easy and fast dish perfect for coffee time. All you need are some simple ingredients you can pickup in any supermarket and love.

  • Fresh puff pastry (chilled not frozen)
  • 2 apples (preferrably Boskopp or Breaburn)
  • some raisins
  • some chopped almonds
  • 2 tbsp sugar
  • some cinnamon

Unwrap the pastry dough, roll it out, line a baking tray with baking paper and preheat the oven to 200°C (with fan). Peel and Dice the apples in small sqaures, mix with raisins, almonds, sugar and cinnamon. Cut the pastry into rectangles and fill with the apple mixture. Roll up the pastry and press the ends on both sides together with fingers or a fork. Transfer to the baking tray and put into the oven for 10-15 minutes. Serve warm with whip cream and love <3

Christmas Cookies Part 1

I know, I am quite early with this but… I set myself on diet for some time as I twisted my ankle once too many and suffer from a sports-ban until Christmas. So I won’t be baking much at all in the next time and thought it would be a good idea to blog some of the recipes of my repertoire.

This is the recipe that I’ve been loving all my live. When I was a kid, my Mom always prepared the dough a day in advance. The next day, every one of us got his share of the dough and was responsible for rolling it, cutting out cookies transferring them on the baking tray and decorating them. My Mom then took care of the baking and we had so much fun. Good old days 🙂

Quick christmas cookies

I know, it is only october but today is a bank holiday in Germany and we started the day lazy on the couch. Around 3, after the second lazy sunday movie, my boyfriend had a craving for christmas cookies. If supermarkets start to sell christmas stuff in early septermber, why not bake my first own christmas cookies in october?! So I went into the kitchen to see which ingredients I had at hand. After another quick look in my recipe collection I decided to make my grandma’s coconut macaroons.
It is a very simple and quick recipe but soooo delicous!

2 eggs
175-200 g sugar
1 Tablespoon honey
250 g grated coconut

Beat the eggs and the sugar together to a thick and solid cream. This takes around 5-10 minutes. Whisk in the honey and gradually add the grated coconut until it reaches a doughy consistency, but not too soft.
Preheat the oven to 150° C/ 300° F and line two baking trays with parchment paper. Take two teaspoons and spoon the dough onto the parchment paper. My grandma used to put the dough on wafers but I don’t like wafers myself so I do it without them.
Bake them for 15-20 minutes and enjoy already hot from tray 😉
